December 2014  SKULLY BARREL No. 20 SOUR BLACK ALE Based on our “Hell for Stout” recipe, as a sequel to “Skully Barrel No. 2”, this sour ale was aged in a combination of select red wine and spirit barrels. Our proprietary blend of souring bacterias and feral yeast strains were introduced to take this beer in a wayward direction. The resulting ale is tart, roasty, and crisp with a distinct vinous character, complex acidity, and hints of dark chocolate. 8.5% ABV SKULLY BARREL No. 21 A.K.A. OSA FRAMBUESA Harvesting fully ripe raspberries before the bears do takes patience, guts, and a little luck. Well lucky you! We’ve paired our sour brown ale with vibrant red raspberries to create a sweet, tart, and fruity beer. Our house Brettanomyces and souring bacterial blend adds a hint of danger to keep things on the wild side. Venture down the hidden path for something uncommon and well worth the risk. 8.5% ABV END OF THE BEGINNING Vol. II BREWMASTER’S BLENDING PROJECT “Now this is not the end. It is not even the beginning of the end. But it is, perhaps, the end of the beginning.” ~Winston Churchill Vol. II of our year end barrel-aged sour ale master blend. This complex, straw-colored brew has aromas of tart fruit, white grapes, and light toast oak. Crisp refined sourness and pilsen malt quickly give way to flavors of woody vanilla and earthy funk. Nuanced and sophisticated, this mature ale is an homage to art of beer blending. 8.5% ABV November 2014 IN THE SPIRIT OF SKULLY BARREL No. 2 A.K.A. MY OLD KINTUCKY COMMON This unique award winning sour mash ale has the distinctive nose of an expertly hand-crafted bourbon. Brewed with rye, corn and barley malts, then aged for over 1 year in Bourbon barrels to add familiar flavors of vanilla and oak. This complex offering is a slow sipper to savor, swirl and share with friends. 9% ABV SKULLY BARREL No. 18 SOUR SPICED APPLE Using the juice of Granny Smith apples and just a hint of Ceylon “True” Cinnamon, we’ve created this exceptional amber ale reminiscent of our favorite apple pie. Blended in the Biere de Coupage method, a younger and more mature chardonnay wine barrel aged ale were married. Tart, crisp, nostalgic,and exceptionally refreshing. 7% ABV. SKULLY BARREL No. 19 SOUR CRANBERRY ALE To create the ideal sour ale complement for any feast, we're paired tart cranberries with sweet and bitter orange peels. Red wine barrel aging and our house yeast blend combine to add a facet of intrigue and complexity. The resulting ale is crisp, tangy, funky, and just fruity enough to balance the most savory main course or rich dessert. 7% ABV October 2014 FARMHOUSE NOIRE COLORADO-FARMHOUSE ALE This dark, smooth, delicious Colorado Farmhouse Ale was inspired by the rustic ales of the Alsace region. The roasted malt characteristics are lightly accentuated with a hint of Fleur de Sel which complements our proprietary Paradox house Brettanomyces farmhouse blend. She’s a shadowy dame in search of a P.I. worth his salt. 7.5% ABV SKULLY BARREL No. 15 SALTY MELONS SOUR Inspired by the Gose style of salted sour beers, this sour mash golden ale was aged in white wine barrels. Next it spent extended aging time on generous amounts of watermelon, which comes through in the nose and on the palette. Tart, dry, and luscious, it’s like a ripe salted chunk of watermelon in a glass. 8.9% ABV SKULLY BARREL No. 17 DRY-HOPPED SOUR This medium-bodied sour mash amber ale weighs in at 103 ibu’s, unusual for a sour beer. This sour ale is fragrant with Falconer’s Flight hops, a proprietary blend of Citra, Simcoe, Sorachi Ace and experimental hops, which add distinct tropical, floral, lemon, and grapefruit characteristics to this special sour beer. 8.5% ABV September 2014 PEPITAS GRANDE WILD DARK PUMPKIN ALE This is pumpkin beer Paradox style. A barrel-aged fruited beer, this ale contains pumpkin, roasted pepitas, Chimayo red chile and a hint of Ecuadorian cacao nibs. Truly a special pumpkin ale. 8% ABV SKULLY BARREL No. 16 CITRUS SOUR Created with our sour-mash process and infused with citrus peel, this Skully #16 is an assertively citrus sour ale. 6.9% ABV BRETTS' HOP FARM COLORADO-FARMHOUSE ALE This farmhouse barrel-aged ale features 100% Paradox house Brettanomyces strain, dry-hopped with Falconer's Flight hops. Falconer's Flight is a an extraordinary proprietary blend of Citra®, Simcoe®, Sorachi Ace and experimental hops with tropical, citrus and floral notes. 9% ABV DEUX ANS ANNIVERSARY ALE Paradox Beer Company is celebrating two years of selling our unique barrel-aged beer with this master blend of lightly tart, dry special reserve ale aged in our oldest oak wine barrels. The silver-labeled bottle will alert your customers to the exclusive nature of this second- anniversary ale. We are delighted to share this tawny, oaky barrel-aged ale exhibiting the characteristics of the signature Paradox Brett strain. 7.9% ABV August 2014 PEKEPEKE HOPPY BARREL-AGED FARMHOUSE Dry-hopped Farmhouse barrel-aged blend of our amber and golden saison. Our house Brettanomyces meets New Zealand Pacific Gem Hops to complement the complex fruit and herbal esters created during aging and fermenting. 6.9% ABV MADURO ROBUST SCOTCH BARREL-AGED SMOKY SOUR 40 year old scotch barrels impart heavy oak toast to this sour, smoky, mahogany-colored ale with hues reminiscent of air-cured tobacco. Extended aging on Spanish cedar brings spicy notes that add woody depth to this perfect sipper for the lounge. 10% ABV SKULLY BARREL No. 14 CHARDONNAY BARREL-AGED PALISADE PEACH SOUR Palisade peach sour aged for over a year in French chardonnay barrels with last year's peach harvest, using our blend of house yeast, bacteria and slow-souring Bretts, the final blend spiked with fresh peaches from this year's harvest to bestow a pure and bright fruit flavor to this complex old sour golden. 7.9% ABV
